In Desperate Times

So for some reason when 3:30 rolled around this afternoon, my husband and I realized we were both SO hungry! I needed a quick mid-afternoon dinner FAST, so here is what I came up with...


Easy Wine Chicken
- 1 Package Chicken Tenderloins (about 10 oz)
- Grated Parmesan Cheese (to taste) ..... I used about 1/4 Cups
- Oregano (to taste) ..... about 1 Tablespoon
- Salt and Pepper (to taste) ..... about 1/4 Teaspoon of each
- 3 Tablespoons Corntarch
- 3/4 Cups Red Cooking Wine
- 1/4 Cups Sherry Cooking Wine
- 1/4 Cups Half and Half
- 3 Tablespoons Vegetable Oil for shallow frying (I know it doesn't seem like much, but it gets the job done without adding too many calories) :)

Start oil heating in a skillet on medium heat. In a small bowl, combine parmesan cheese, oregano, salt and pepper. Place cornstarch in a separate small bowl. Coat the chicken, covering first with cheese and seasonings, followed by an outer layer of cornstarch (this will allow chicken to crisp up in the skillet).

Once oil is heated, place the chicken in the skillet and brown on each side, a couple minutes per side. Add both cooking wines and half and half. Bring to a simmer and allow chicken to finish cooking through. Remove chicken and continue simmering the liquids until it thickens slightly, approximately 10 minutes. Cover chicken with sauce and enjoy!

*I also cooked mushrooms in a separate pot with the same sauce ingredients, so it is similar to chicken marsala minus the marsala wine. :)

Unfortunately, I was unable to snap a picture of this dinner because it was eaten too quickly. Even so, I hope this dinner is simple enough for anyone to throw together on a busy night and delicious enough to become a regular dish in your family's home. :)
